I can’t remember where I first saw the idea for this. It’s probably something my oldest daughter pinned. This is so simple I’m not sure it even qualifies as a recipe.
It’s chicken breasts that you cook in the crock pot, shred, and use for tacos, nachos, enchiladas, quesadillas… there are a ton of options.
All you need is 1.5 – 2 pounds of boneless, skinless chicken breasts, a package of taco seasoning, and a 16 ounce jar of salsa. Our grocery store was running a sale on split chicken breasts so we stocked up and I cut the meat away from the bones before using.
Put the chicken breasts in the crock pot.
Sprinkle with the taco seasoning.
Then top with the salsa.
Set the crock pot on low and let it go for 5-6 hours.
Here it is all cooked.
When done use 2 forks to shred the chicken and stir it up.
That’s it. So simple and so delicious. This freezes well and makes enough for our family to get two meals out of it.
