Football season is underway and that means tailgating and watch parties! If a party is in you plans, I have a great chili cheese dip for you. It’s my family’s favorite and it’s based off a Pampered Chef recipe.
Chili Cheese Dip
2 – 15oz cans of chili with no beans
2 tsp. taco seasoning
2 cups shredded cheese (we like cheddar jack or cheddar)
2 cloves garlic, minced
1 – 8oz brick of cream cheese (non-fat works well)
Place the cream cheese in a mixing bowl or 2 quart Pyrex glass measuring cup and soften slightly in the microwave. Mix in the taco seasoning, garlic, and chili. Once it’s thoroughly mixed, stir in the cheese.
To heat you have several options:
- Place in a shallow baking dish and bake in a preheated 350 degree oven for 20-25 minutes.
- Microwave until hot in a microwave safe container . 10 -15 minutes on 50% power stirring every 2 minutes works in our microwave.
- Place in a crock-pot an heat on high until desired temperature, then switch it to warm.
Notes: This is a basic recipe and you could take it in several directions and make it your own. Chopped onion, fresh minced jalapeno, green chiles, cilantro, black olive, or fresh tomatoes would all be great additions or garnishes.
If you don’t have fresh garlic, dried minced garlic will work too.
Chili with beans will work if it’s all you have in your pantry but the non-bean fans in my house prefer it without beans. My daughter who doesn’t like my chili loves this dip when we make it without bean.
We like to have this dip with multi-grain scoops or the black bean and tortilla chips from Trader Joe’s.
During the Summer months we make this dip in the microwave so we don’t have to heat up the house. Winter months we use the oven. Super Bowl Sunday you’ll find this dip in our crock-pot.What's your favorite football party dip? Click To Tweet
