Easy Crock-Pot Breakfast Casserole

My family loves breakfast! Sometimes we eat it for the evening meal which begs the question… do you call it brupper (breakfast + supper) or brinner (breakfast + dinner)?

Whatever you call it we call it easy and delicious!  We’re big fans of breakfast burritos, breakfast pizza, and this breakfast casserole.

I wish I could link you to the person who originally shared this recipe online.  My oldest daughter is a Pinterest ninja and found it for our family.  We’ve tweaked it slightly and enjoy it every couple of weeks because it’s delicious and easy.

Easy Crock-Pot Breakfast Casserole

Here’s what you’ll need to make this in your Crock-pot:

*26oz. bag of frozen hash browns

*1 dozen eggs

*1 cup milk

*1 tbls. ground mustard (my daughters questioned this ingredient but still love this recipe)

*1 pound cooked breakfast meat

*Salt & pepper, to taste

*16oz. shredded cheese (we prefer cheddar)

Here’s what you do:

Cook the breakfast meat of your choice.  We’ve tried bacon, ham, and sausage.  They’re all great!

Use cooking spray to spray your crock-pot.  Add potatoes and meat.

Crack the eggs in a 2 quart Pyrex measuring cup.  Add milk, mustard, salt, and pepper.

Whisk together.

Add the cheese on top of the potatoes and meat.

Pour the egg mixture into the crock-pot and stir all together until it’s all mixed.

Make sure the crock-pot is turned on to low and plugged in.  This instruction should be included in every crock-pot recipe.

Nothing is more frustrating to come home to what you think will be an awesome meal only to realize it’s room temperature trash. (I have first-hand experience with this).

Cook on low for 6 – 8 hours.  Then serve and enjoy!
